This tomato, cucumber and pepper salad might feel a bit summery for some of you right now, but here in the “tropics” is already getting warm and a salad like this is very much appreciated.
Regardless of the outside temperature, this tomato, cucumber and pepper salad is one of my go to salads when everything else fails, especially when you have no time (or interest) in cleaning lettuce (unless of course, you have some pre-washed handy).
Just grab a couple big tomatoes (or a few tiny ones, like Campari), a cucumber and one pepper. Dice everything, toss it in a bowl and dress it up salt, extra virgin olive oil and balsamic vinegar. Sprinkle oregano on top and you’re done. And if you want to get fancy you can throw a few Kalamata olives on top. If you don’t, it’s ok, it will still be an amazing salad.
It’s an extremely easy, tasty and versatile salad that can be put together in less than 5. What I like about this salad is that is a base for multiple combinations and you get many different salads. Some ideas of things to add are:
Avocado
Red onion
Chickpeas
Black beans
Because this salad is all about the ingredients, try to get the best quality products within your reach. It does make a difference.
