Pasta with bell pepper sauce

Last Saturday I prepared this pasta with bell pepper sauce before my son’s soccer game. As pasta is a good meal to have before doing exercise, I thought they would like some pasta. Simple carbs get easily digested and are the first to get released to the bloodstream when energy is needed, and pasta just does that. So, I looked for a new recipe and came across this pasta with bell pepper sauce that was easy and quick to put together, and seemed delicious to me. Exactly what I needed to prepare on a Saturday morning.

I got the recipe from a great book, the Silver Spoon, which I had never heard of until I saw it at a friend’s house. I loved it and immediately bought it (I have something special for cookbooks…). Published in 1950, it is one of the most well-known Italian cookbooks.

Anyway, going back to the pasta, I prepared this pasta with bell pepper sauce thinking that everyone would like it. Both my older kids like bell peppers and, oh surprise!, they did not like it at all, not even the baby! Don’t know why because both my husband and I loved it!!! I’m still wondering if there was a bit of a show involved… Maybe they saw a redish sauce and were probably expecting some kind of tomato sauce?? I don’t know…. Nevertheless, they did try it at bit, and ended up just eating the salad and a banana…

At the end my son went to the game with not too much in his stomach (despite multiple warnings from us), but ended up wining the game 6-0 and scoring 3 goals 😊. So, we now joke with him that he will have bell pepper pasta before every game!

The sauce is simple and can’t be any easier to prepare, it really has no secret, though the result is pretty amazing! A fragrant silky pepper sauce that is very easy to eat.

To add some crunchiness to the dish, my husband melted a couple of slices of Gruyere and made some crispy cheese chips. It turned out really great and really added and interesting touch to the dish. Unfortunately, I have no pictures of it… Mind you, these pictures were taken in 5 minutes while my family was waiting and starving to have their lunch…

Pasta with bell pepper sauce

Description

Easy really tasty pasta with bell pepper sauce. With just 4 ingredients you have a great dish!


Ingredients

Scale
  • 1 lb dry pasta
  • 1 medium size yellow onion
  • 3 bell peppers (I used one red, one yellow and one orange)
  • ½ cup heavy cream
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Cut the onion and sauté it in olive oil until soft, 5-10 min.
  2. Dice the peppers and add to the onion. Cook until soft. Another 10 min.
  3. In the meantime, boil the pasta according to the package instructions.
  4. Transfer the onions and peppers to a blender, add the heavy cream and blend.
  5. Return to the pan and adjust for salt and pepper.
  6. Stir the pasta in.
  7. Eat.

Notes

  • If you want it vegan just omit the heavy cream.
