There is nothing more comforting than a nice dish of pasta with pesto, and if the pesto is homemade, even better. Like this linguine with homemade pesto that I bring you today.

Pesto is extremely easy to make and it’s a great way to use your leftover basil. You just need to find the right balance with all the ingredients and then you will have the perfect pesto for you. The recipe here is the one I like the best. We don’t like garlic so the recipe does not contain it, but of course you can add it if you like it.

I put together this linguine with homemade pesto one day that our basil plant was coming to an end and before it completely died I decided to give it some use and made some pesto.

And for the pasta, you can use any type of pasta you like. It can’t get any easier than this!

Description

Linguine with homemade pesto. Delicious and quick to put together! 


Ingredients

Scale

For the pesto:

  • 2 cups fresh basil
  • 1/2 cup grated Parmesan
  • 1/3 cup (4 tbsp) pine nuts
  • 1/2 cup extra virgin olive oil

For the pasta:

  • 1 lb linguine
  • Water
  • Salt
  • Fresh grated Parmesan cheese 

Instructions

  1. Prepare the pesto: in a hand blender (or food processor) blend the basil, Parmesan, pine nuts and extra virgin olive oil until all the ingredients are well mixed and a paste has formed. You can add some water if you’re not satisfied with the consistency of the pesto.
  2. Bring a big pot of salted water to a boil and cook the pasta according to the package instructions.
  3. Drain the pasta, return to the boiling pot and mix the pesto in.
  4. Serve and top with some more grated Parmesan cheese.
  5. Enjoy!

Notes

  • I don’t use garlic but feel free to add it to your pesto if you like it.
