Chocolate chip oatmeal cookies

This recipe is for Beth. I was supposed to write about the poke bowls she introduced to us when we visited her in California, but last Friday I didn’t have time to take pics before we devoured them, so instead I’m posting these chocolate chip oatmeal cookies that I’m sure she’ll love too! You let me know, Beth 😉.

This is probably the first and only recipe that I have tried and tested I don’t know how many times until I had the perfect combination of ingredients. The perfect balance of sweetness and dark chocolate. The perfect cookie to make disappear any cravings you may have. Totally worth a try.

These chocolate chip oatmeal cookies are easy to make: just mix everything and put it in the oven. Pretty straight forward. Made with oats, almond flour, some (not too much) sugar, butter, vanilla, cinnamon and choco chips. A great snack, breakfast or coffee companion. Enjoy!

Chocolate chip oatmeal cookies

Description

Easy delicious chocolate chip oatmeal cookies. I bet you can’t eat just one!


Ingredients

Scale
  • 3 tbsp butter, room temperature
  • 4 tbsp brown sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 1/3 cup almond flour
  • 1 1/3 cup oats
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/3 cup dark chocolate chips 

Instructions

  1. Preheat oven at 350F.
  2. Wisk butter and sugar until pale and creamy.
  3. Add the egg and vanilla essence and mix well.
  4. Add almond flour, oats, baking soda and cinnamon and mix again. 
  5. Add chocolate chips and mix again.
  6. Scoop in a baking sheet covered with parchment paper.
  7. Bake at 350F for 13 min.
  8. Let cool and enjoy!
