Cabbage, potato and bacon mash

This cabbage, potato and bacon mash is a version of a typical Catalan dish from a region in the Pyrenees (La Cerdanaya) called Trinxat de la Cerdanya. The best definition I can think of trinxat is something cut, crumbled and mashed; which is basically what happens to the ingredients of this dish. It is a winter dish with just boiled potatoes and cabbage, then mashed with a fork and sautéed in the pan with a type of pork belly or pancetta called cansalada in Catalan.

I will confess that I had never had cabbage, potato and bacon mash when living in Spain. Cabbage was never in my list of favorite foods and I never had it growing up. It wasn’t until recently that I started using it in my cooking.

Last week I had a cabbage in my fridge that I wanted to use for a chicken recipe but we already had chicken so I had to come up with something new. Then I remembered this typical winter dish and I decided to give it a try.

In my American version I used bacon instead of cansalada. I could have used pancetta, which is much similar to the Catalan cansalada, but I didn’t think about it until the recipe was done… I am not a big fan of bacon, but I found a brand that had no sugar and no spices or weird flavors, that worked out pretty well. The smokey flavor was still there which cansalada does not have, but it was totally acceptable. Now I’m curious to see how it turns out with pancetta. I will be doing it again to see if there is a big difference.

With just three ingredients you have a wonderful winter dish!


  • 5 medium potatoes
  • 1 cabbage
  • 6 oz bacon
  • Olive oil
  • Salt
  • Pepper


  1. Peel and cut the potatoes in quarters.
  2. In a big pot bring water to boil with some salt, add the potatoes and boil for 10 minutes.
  3. In the meantime, clean the cabbage: remove the outer leaves and separate the rest of the leaves with your hands.
  4. After 10 min, add the cabbage to the boiling potatoes and cook for another 20 minutes.
  5. Meanwhile, cut the bacon in 0.5-inch strips and cook in a pan. Once cooked remove the pan from the heat. Remove any excess fat from the bacon.
  6. Drain the cabbage and potatoes and mash them with a fork or potato masher. You don’t want to overdo it, just enough to be smooth but with texture.
  7. Transfer the potato and cabbage to the pan with the bacon and cook until it starts to get a bit golden brown.
  8. Adjust for salt and pepper.
  9. Enjoy!
