Beef stew with onion sauce

This beef stew with onion sauce is one of the easiest and most delicious stews in the world. It is a recipe from my grandmother, she used to make it when we visited. It is a perfect winter stew, so now that it seems that winter has finally arrived in Florida (16°C-61°F!!!), it felt good to cook some winter food. For us down here it’s now or never. Our window of cooking “wintery” food is very narrow!!

The recipe is ridiculously easy: beef and onions with some water in the pressure cooker for 15 min. Done.

I like to use the pressure cooker because the meat is extremely tender when done, but if you don’t have a pressure cooker you can use any regular pan to prepare it. The cooking time might be a bit longer, but that’s it.

For the beef I use and recommend skirt steak. It is a thin cut which has a lot of flavor. When cooked it is soft and melts in your mouth, but any thin flavorful cut would work too.

I normally first lightly flour the meat and then pan sear it before adding it to the pressure cooker. The flour helps thicken the sauce afterwards, but when I’m in a hurry or don’t want to have an extra dirty pan to wash I do it without the flour and the result is good too. In this case, what you can do is add some flour to the sauce after the meat is cooked to thicken it.

Also, 2 lb might seem a lot of meat for 4 people, but it will reduce its size once cooked. Plus, it’s so good you might want to eat more 🙂 .

Description

The easiest most delicious beef stew out there. Just beef and onions.


Ingredients

Scale
  • 2 lb outside skirt steak
  • 4 medium onions
  • 4 cups of water
  • Flour
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Clean the excess fat of the skirt steak and make 1-inch wide pieces.
  2. Salt the meat and flour it lightly.
  3. Sear the meat with olive oil in a pan.
  4. Transfer the meat to the pressure cooker.
  5. Cut the onions in large wedges and add them to the pressure cooker.
  6. Add water, just enough to cover the meat and onions. I used 4 cups.
  7. Cook on medium heat for 15 min (from the moment vapor starts coming out of the pressure cooker).
  8. Once cooked remove the meat (it should be very soft and tender) from the onions and make the sauce: blend the onions with either a hand blender or a regular one. Let the sauce reduce for a few minutes on the stove and adjust for salt and pepper.
  9. Return the meat to the pressure cooker with the sauce.
  10. Enjoy!
