Arugula salad with parmesan, cherry tomatoes and pine nuts

Easy and sophisticated salad that can be put together in no time.


  • 5 oz baby arugula
  • ½ cup shaved parmesan cheese (use a vegetable peeler to form shaves from a block of parmesan)
  • 1 pint cherry tomatoes, halved
  • 2 tbsp pine nuts, toasted

For the dressing:

  • 3 tbps extra virgin olive oil
  • 1 tbsp Balsamic vinegar
  • Kosher salt
  • Balsamic glaze (optional)



  1. In a large bowl add the arugula, cherry tomatoes, pine nuts and freshly shaved parmesan cheese.
  2. In a jar shake the olive oil, balsamic vinegar and salt.
  3. Add to the salad and toss until well coated.
  4. Drizzle with balsamic glaze if you want.
