Description
Easy and sophisticated salad that can be put together in no time.
Ingredients
- 5 oz baby arugula
- ½ cup shaved parmesan cheese (use a vegetable peeler to form shaves from a block of parmesan)
- 1 pint cherry tomatoes, halved
- 2 tbsp pine nuts, toasted
For the dressing:
- 3 tbps extra virgin olive oil
- 1 tbsp Balsamic vinegar
- Kosher salt
- Balsamic glaze (optional)
Instructions
- In a large bowl add the arugula, cherry tomatoes, pine nuts and freshly shaved parmesan cheese.
- In a jar shake the olive oil, balsamic vinegar and salt.
- Add to the salad and toss until well coated.
- Drizzle with balsamic glaze if you want.
